sure, all you need to do is write a quick image generator (bitmap is pretty simple) and write out the vram to a file on the memory stick, or if you have v1.0/v1.5 use psplink and you can take screen shots directly from the shell.
For capturing video it is a touch more difficult. You can extrapolate the capture of single images to capturing every frame which is displayed, that can then be placed in separate bitmap files and encoded later or you could try and write out an avi directly. However you probably wont be able to get audio on there as well at the same time unless you really are not doing alot. With video you will also likely run out of space quickly on a memory stick.
